Mango Salsa - Low Sodium - Low Calorie

What good is investing in financial assets for the future if you are not around to enjoy the fruits of your sacrifice?  Not only that, but you can save a fortune in health care costs with a healthy diet and exercise.   This recipe below for healthy, homemade mango salsa is much healthier than the mango salsa I ate in Hawaii because it skips the salt.

Homemade Low Sodium Mango Salsa

Yield: 3 cups (12 servings)
Ingredients
  • 2 semi-ripe mangos chunked, unpeeled
  • 1 cup (16 g) cilantro
  • 1/2 medium red onion, peeled
  • 1 jalapeno, halved, seeded
  • 1 tablespoon lime or lemon juice
Steps:
  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and quickly increase speed to Variable 4
  4.  Blend for 15 seconds or until desired consistency is reached. If necessary, use the tamper to push the ingredients into the blades while processing.
Health Classification: Diabetic Friendly, Low Fat, Low Sodium, Low Cholesterol, Heart Healthy, Gluten-Free, Vegetarian, Vegan, Raw

Homemade Kitchen Sink Smoothie
(a little bit of everything in this green smoothie)

Yield: 3 1/2 cups (840 ml)
Ingredients
  • 2 cups (310 g) fresh, ripe pineapple, with core (or a 2-inch-thick slice)
  • 1 stalk celery (7-inch stalk), halved
  • 1 cup (30 g) spinach leaves, gently packed
  • 4 ounces (113 g) low fat vanilla yogurt or vanilla soymilk
  • 2 cups (480 ml) ice cubes
  • sweetener to taste if pineapple is a bit tart (we like Splenda but any will do)
Steps:
  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and quickly increase speed to Variable 10, then to High.
  4. Blend for 60 seconds or until desired consistency is reached. Serve immediately.

Homemade Organic Apple Juice

Homemade Organic Apple Juice
Yield: 1 2/3 cups (400 ml)
Ingredients
4 medium to large organic apples
1/4 cup (60 ml) cool water
2 double layers of cheesecloth
Steps:
  1. Place apples and water into the Vitamix container in the order listed.
  2. Secure lid.
  3. Select Variable 1.
  4. Turn machine on and quickly increase speed to Variable 10, then to High.
  5. Blend for 45 seconds, using the tamper to push apples into the blades until pureed.
  6. Transfer puree to a bowl lined with cheesecloth and twist until juice is extracted.
Note: For the best flavor, combine two or more apple varieties.

Variations:  We find it easier to quarter the apples, remove the skin and seeds with a paring knife, blend as directed and drink the juice directly.
Health Benefits 
Excerpts from Wikipedia:  Research suggests that apples may reduce the risk of colon cancer, prostate cancer and lung cancer. Apples are a rich source of antioxidant compounds.

There is evidence that in vitro (in a controlled environment) apples possess phenolic compounds which may be cancer-protective and demonstrate antioxidant activity. The predominant phenolic phytochemicals in apples are quercetin, epicatechin, and procyanidin B2.

Apple juice concentrate has been found to increase the production of the neurotransmitter acetylcholine in mice, providing a potential mechanism for the "prevention of the decline in cognitive performance that accompanies dietary and genetic deficiencies and aging." Other studies have shown an "alleviat[ion of] oxidative damage and cognitive decline" in mice after the administration of apple juice.
